This was suggested by a friend, and it seems to have worked for me so far. No idea if it's already been posted, so apologies if this is old news…
Go into Nvidia control panel (no idea for AMD, don't use them, sorry!), and create a custom profile for Hunt and hard set all the AA, AF settings etc… there instead of using the in game settings. Basically all the settings that usually say 'application controlled' or similar.
For whatever reason if I use the in-game settings, my FPS will bomb from 100+ to <40 in areas like the stone quarry, while my GPU / CPU sit there ticking over at half power or less barely doing anything. If I use the same settings, but set in the Nvidia ctrl panel, I stay above 80fps in these areas and my GPU / CPU usage / power stay mostly normal.
For context: 9700k, 3070ti, 1440p, all high settings, 2x AA, motion blur and that other annoying crap turned off.
